Kesariya bhaat/meethe chawal/sweet yellow rice

Happy Basant Panchami to all. Basant Panchami is known for painting everything in yellow. So yellow rice or kesariya bhaat.

Ingredients:

  • One bowl of rice
  • 3/4th bowl of sugar
  • 1/2 bowl milk for soaking saffron
  • 8-10 strands saffron
  • 4-5 cardamom
  • 6-7 whole black pepper
  • 4-5 cloves
  • two tbsp desi ghee
  • 1/2 tsp nutmeg powder
  • dry fruits of own choice

Method:

First wash and soak rice for half an hour. In between boil water in a large vessel for boiling the rice. Cook the soaked rice in this water. Rice will be cooked only 80 percent. When rice get cooked sieve it and leave it to get cool.

Now take thick bottom pan and add desi ghee into it and put all the spices and coarsely chopped dry fruits.

Fry them then add cooked rice and sugar into it. Mix well. Now add saffron milk into it and cover it to  cook for 10 mins at very slow flame.

After 10 mins open the pan and here it is . The yummy tasty kesariya bhaat to serve hot.

Grilled Paneer

This is the most popular Paneer recipe among paneer lovers. So don’t waste time and let’s prepare.

Ingredients:

  • 200 gm paneer (cottage cheese)
  • 100 gm curd
  • 2 tsp roasted gram flour
  • 1 tbsp kasuri methi
  • salt as per taste
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp ginger garlic paste
  • 1 tsp mustad oil
  • butter and mustard oil for shallow fry

Amla ka murabba

Amla which is called Indian gooseberry. It is a factory of vitamin c. In the form of murabba it gives full health benefit with taste. It is good for immunity. Let’s prepare this healthy sweet.

Ingredients:

250 gm Amla( Indian gooseberry)

300 gm Sugar
1 tsp pink salt, black pepper powder, cardamom powder

Method:

First of all pick big amla for murabba. Dip all of them in water overnight. In the next morning drain all the water and prick all amla.

Boil water and add all amlas into boiling water and switch off the flame after 10 mins. and cover the pan for another 10 mins.

After 10 mins drain all water. Take big vessel and put 1/2 cup water sugar and drained amlas.

Stir it at low medium flame until became sugar syrup . To check the consistency take a drop of sugar syrup in a suacer and when it get cool touch it, if it is sticky sugar syrup is ready and murabba is ready too. Add salt, pepper and cardamom powder.

Take out murabba in another vessel and cover it. Leave it for 48 hours. Then it will be ready to eat. Enjoy it and boost your immunity this winter.

Manchurian

Home made Manchurian is really worth to make as kids love it and no need to go out in this pandemic. So let’s prepare yummy Manchurian.

Ingredients

  • Half cabbage
  • One carrot
  • One small green bell pepper (capsicum)
  • Beans(optinal)
  • Spring Onions
  • Onions
  • 3 tbsp soy sauce
  • 2 tbsp vinegar
  • 2 tbsp red chili sauce
  • 2 tbsp tomato ketchup
  • 2 green chillies
  • salt
  • pepper
  • 2-3 tbsp all purpose flour
  • 5-6 tbsp corn flour
  • ginger garlic paste
  • vegetable oil to fry

Method

First chop all the vegetables finely except carrot. Carrot has to be grated. Now mix all the vegetables and spare some veggies for gravy.

Now put some salt, pepper powder, and 1 tsp of soy sauce, vinegar, red chilli sauce, all purpose flour and corn flour. Flours is to be added slowly until veggies become soft dough.

Now make balls of this dough and deep fry them.

Now prepare gravy. Put some vegetable oil in a pan and add green chillies and some ginger garlic paste. Then saute all the spared veggies. Add all the remaining ingredients and two glass water. Take two tbsp of corn flour and make a paste and add into the gravy to make it thick.

Now give three four boil and pour over dumplings.

Yummy, tasty Manchurian is ready. We can serve it with fried rice. The full recipe of fried rice will be posted in next blog. Till then enjoy home made food.

Soya Chaap

Hiiii! guys… It’s long since I posted any of my recipe. You all know it’s corona time. But now I am back with my one of my favourite winter recipe….’Soya Chaap’

Ingredients:

  • 4-5 sticks of Soya chaap
  • 150 gm Curd
  • 4 nos. Tomatoes
  • 2-3 Onions
  • 7-8 Cahews
  • One stick cinnamon, two bay leaves, 2 cloves,one tsp of cummin seeds, garam masala powder, salt, green chilli, red chilli powder
  • Oil for cooking

Method:

First of all cut chaaps into small pieces and fry them.

Fry onions till dark brown and keep aside to get cool.

Fry whole spices except bay leaves cahews and chopped tomatoes and let it cool.

Now grind fried onions and tomatoes in fine paste.

Take oil in separate pan for tadka. Put remaining spices and paste into oil and saute till oil leaves the sides of the pan.

In between marinate fried chaaps with curd and small amount of salt, red chilli powder and garam masala.

Now add this marinated chaap into gravy and cover pan for ten minutes at very low flame. And don’t forget to add one cup water into gravy. Chaap is ready to serve with chapati. Garnish with green coriander leaves. Here it is with fenugreek chapati ( Indian bread).

Ramdana laddoos

Here is the video od Ramdana laddoos which is also called rajgira laddoos. This is the monsoon season when Ramdana is good for health. Ramdana, jaggery both are immunity booster also.

First of all take 100 gms of ramdana. Prepare jaggery syrup with Jaggery powder/ jaggery. 100 gms of jaggery in a pan and pour one bowl of water. Make jaggery syrup of thick consistency. It can be checked as shown in video. Take water in a bowl and pour one drop of syrup. If it is not spread and became like small ball then syrup is ready. Now put all the ramdana into syrup and mix well. Transfer it into another dish. Apply some desi ghee on palms and make laddoos 😋. Uploading video for help. Please watch and try. Anarsa

This delicacy is from Uttar Pradesh and Bihar, the two north Indian states . This tasty and healthy sweet is prepared on Nag Panchami when we worship snakes.

Ingredients:

one bowl of rice flour

1/2 bowl of powdered sugar

one tbsp of poppy seeds and white sesame

2-3 tbsp milk

desi ghee/ oil to fry

Method:

Mix rice flour and sugar with the help of milk to make a dough. Don’t put whole milk at a time but slowly slowly. Due to moisture of rice flour very less milk is needed. Put both seeds in a separate plate.

Now make a small ball of the dough and roll over poppy seeds and white sesame seeds. Now deep fry ay very low flame.

Serve crispy hot anarse in this rainy, sultry weather.

Bharwan Karele/Stuffed Bittergourd

Bittergourd is the vegetable which is not so much loved by all. But today’s recipe will be loved by even kids.

Ingredients:

250 gm bittergourd

One small raw mango

One tbsp of peanut powder

One tsp of fennel seeds, coriander powder, cummin powder, red chilli powder, kalaunji, salt

1/2 tsp turmeric powder

oil for fry preferably mustard oil

1/2 tbsp of fenugreek seeds and pinch of asfoetida for tadka

Method:

First of all peel off all karelas and fry them. Don’t throw peels it will be added into stuffing. When karelas are getting fried prepare stuffing also.

Mix all ingredients except fenugreek seeds and asfoetida. Yes raw mango will be grated.

When karelas get cooked while frying take out them and leave them to get cool down. Now stuff with stuffings.

And now add 1 tsp of oil to pan and put asfoetida and fenugreek seeds into it. Now add all the stuffed karelas and cover it for 10 mins at low flame.

And now its ready and serve it with chapatis or parathas.
