Ragi podi idli ( finger millet)

Health conscious folks here is the tasty and healthy recipe of idli which can be eaten guilt free. Here is the full recipe.

One cup each

Finger millet flour ( ragi/ nachni)

Semolina

Curd and water

Salt to taste

Fruit salt

1 tbsp Ghee/ clarified butter

Podi masala/gunpowder ( recipe of gunpowder will be posted soon)

Method:

Mix all ingredients except podi/gunpowder and fruit salt. Mix well, now add fruit salt and mix again. Pour the batter into idli stand and steam for 10 mins. Healthy and tasty idlis are ready.

Take a pan. Heat clarified butter and put idli in a pan and add generous amount of gunpowder.

Now serve it.

Semolina Oats Sandwiches

Ingredients:

8-10 slices bread
6 tbsp curd
2 tbsp suji(semolina)
2 tbsp oats
1 onion nicely chopped
1 tomato nicely chopped
Salt to taste
1/2 tsp black pepper powder
1/2 tsp red chilli powder
1/2 tsp roasted cumin powder
1/2 tsp chaat masala powder
1/2 tsp black mustard seeds
Oil/ghee

Method:

Mango ice-cream

Ingredients:

1 cup mango puree
1 cup fresh home made cream/ malai
1 cup dairy whitener
1/2 cup sugar

Method:



Blend all well and refrigerate for 5-6 hrs in air tight container.

Take it out and churn again once. Refrigerate it for another 5-6 hrs.

And here it is… yummy homemade ice cream with out any hassle that too with easily available ingredients.



If you don’t have dairy whitener you can totally skip it. Take mango, milk cream and sugar in equal amount and follow the same procedure.

Moong dal ke pakode(fritters)

It’s monsoon here in India and we Indian need something fried which is healthy too. So let’s go…

Ingredients

100 gm moong dal washed and soaked

One green chilli, onion chopped

Pinch of asafoetida, salt to taste

Cummin seeds, red chilli powder ( 1/2 tsp)

Oil for frying

Method

Soak moong dal for 4-5 hrs and grind them. Add all other ingredients and mix well. Heat the oil and pour small balls at medium high flame.

Then slow the flame and let it become crisp. Then turn the flame high and take it out. Serve hot with green chutney and hot hot tea.

Spicy Baby Potatoes

Ingredients:

250 gm baby potatoes thoroughly washed

1 tsp pf crushed coriander seeds

1 tsp of red chilli powder

1/2 tsp of kashmiri red chilli powder

1/2 tsp of turmeric powder

1 chopped onion

1 tsp of ginger garlic paste

1 tbsp of mixed herbs

2-3 basil leaves chopped

1 green chilli chopped

1/2 tsp of cummin seeds and carrom seeds

pinch of asafoetida

1 lemon juice

2 – 3 tbsp of oil

Method:

Cut all the potatoes into halves. Do not peel them. Soak them well into water. Put oil into the pan add cummin seeds, asafoetida and carrom seeds. When splutter add chopped onion and ginger garlic paste. Saute onion till translucent. Now add all the ingredient except mixed herbs. Mix well and cover it till potatoes get cooked. When potatoes are cooked add mixed herbs.

Serve it as snacks or side dish. Thank you.

crispy, spicy baby potatoes

Mango smoothie

To beat this scorching heat of Delhi, India let’s try something healthy and tasty.

Ingredients:

1 mango cut into small diced pieces

1 tsp soaked basil seeds

2tbsp of cold milk

generous amount of ice cubes

1 scoop of mango ice cream (totally optional)

2 tsp of powdered sugar (optional)

one cup of mango puree

1tbsp of rose syrup/ roohafza

Paneer Bhurji

Ingredients:

250 gm paneer (cottage cheese) grated.

One big onion chopped

4 tomatoes chopped

3-4 green chilli

1/2 tsp ginger garlic paste

salt to taste

1 tsp of cummin seeds, red chilli powder

1/2 tsp of turmeric powder

1 tsp of desi ghee

2 tbsp curd

coriander leaves for garnish

Method:

Put desi ghee into the pan. Add cummin seeds when splutter add chopped onion and ginger garlic paste. Saute till onion became translucent. Add tomatoes and saute till soft. Now add remaining ingredients except curd . Mix them well. Mow add curd and saute for 2 mins.

Now paneer bhurji is ready to serve. Add chopped coriander leaves before serving.

Picador chilli pickle

This pickle is spicy and tangy which enhances the taste of our food.

Ingredients:

  • 250 gm picador chilli/ moti hari mirch
  • one bowl mustard seeds powder
  • 1/2 bowl salt
  • one tbsp of turmeric powder Nigella/ kalunji
  • 1/2 tsp methi dana
  • 1 tsp red chilli powder
  • 2 tbsp mustard oil
  • 4 tbsp lemon juice

First of all wash all chillies and dry them in sunlight for 1/2 an hour. Then cut the chillies in middle like a pic given below. Mix mustard oil into the spices.

Now fill all the chillies with spices.

Then transfer it into glass container and mix lemon juice into it.

Now keep it in the sunlight for day or two. It will be ready to eat in 3-4 days. Enjoy your food with this tasty homemade pickle.

Urad dal ke laddoo

These laddoos are full of taste which provide immunity also.

Ingredients:

250 gm Urad dal flour ( easily available on super markets)

150 powdered sugar

100 gm mixed dry fruits of choice

250 gm Desi ghee

Method

Fry all dry fruits and churn them when cool down.

Saute urad dal flour in a large wok and in desi ghee on a medium low flame until brown.

When flour get little cool add other ingredients.

Mix well and roll into small ball shape as laddoos.

Take one laddoo daily as a mid meal through out winter.

Tteokbokki

Homemade veg tteokbokki with Indian twist.

Ingredients:

100 gm rice flour
noodles

2 tsp red chilli sauce

kashmiri red chilli powder

red chilli powder

1 tsp vinegar
2 tsp ginger garlic paste

2 onion

5-6 cloves garlic

salt to taste
Cheese to garnish

Method:

First knead rice flour in a soft dough. roll and cut these. Boil water in a pan and put all rice cakes in boiling water.

Check them time to time. When they get cooked strain them and shift them into ice cold water.

Boil noodles also and stained them. Now prepare sauce. Pour a tsp of oil in a pan add ginger garlic paste, chopped onion and garlic. Saute them.

Now add two cups of water and all remaining ingredients except noodles and rice cakes.

When water get boiled low the flame and add boiled noodles and rice cakes. cover the pan. Let it cook for 10 mins at low flame.
